Tortelloni with savoy cabbage
and truffle
Ingredients for four people
3 eggs, 500 gr. Flour, 100 gr. Savoy cabbage, salt,
pepper, olive oil, one potato, white truffle paste,
butter, fresh truffle.
Procedure: start preparing the
dough for the tortelloni by mixing together flour,
eggs and a pinch of salt and work until compact and
well-blended. Let the dough rest and start preparing
the filling in the meanwhile; finely slice the savoy
cabbage and cook in a pan for two minutes adding salt
and pepper. Boil one potato and mash it to mix it
together with the savoy cabbage. Roll out the dough
for the tortelloni and cut out circles using a mould
(or alternatively a glass). Place a small amount of
filling on the circles and fold moulding into a tortellone.
Place the tortelloni into salted boiling water; when
done season with white truffle paste, add a knob of
butter and finish the dish with freshly grated truffle.
